Xi'an Famous Foods celebrates the food of Xi'an, once the easternmost starting (or ending) point of the Silk Road. The dish to get is the
spicy and tingly lamb face salad, but, ever the iconoclasts, we went a different way, and tried two versions of hand-ripped noodles: spicy cumin lamb (top photo) and Mount Qi vegetables (bottom photo), spicy, rib-sticking food, fortifying food, the kind of food you want to eat before you head out into the cold, or down a very long road.
